Italian Chocolate Pudding

Ingredients:

  • 1 cup heavy whipping cream
  • 1 cup whole milk
  • 6 egg yolks
  • 1/4 cup granulated sugar
  • 4 oz semi-sweet chocolate, roughly chopped
  • 1 tablespoon butter
  • Pinch of salt
  • 1 teaspoon vanilla extract

Preparation:

  1. Heat the Dairy:
    • In a medium-sized saucepan, combine the heavy cream and milk. Place over medium heat and bring to a simmer, then remove from heat.
  2. Prepare the Egg Mixture:
    • In a large bowl, beat the egg yolks and sugar together until the mixture is smooth and slightly airy.
  3. Temper the Eggs:
    • Slowly pour a thin stream of the warm cream mixture into the egg mixture, whisking constantly to combine. This step ensures the eggs are tempered and won’t scramble.
  4. Cook the Pudding:
    • Pour the combined mixture back into the saucepan and return to medium heat. Stir constantly for 4-5 minutes until the mixture begins to thicken.
  5. Melt the Chocolate:
    • Place the chopped chocolate in a large bowl. Pour the warm cream mixture over the chocolate and let it sit for 1-2 minutes to allow the chocolate to melt.
  6. Finish the Pudding:
    • Add the butter, salt, and vanilla extract to the chocolate mixture. Whisk until smooth and fully combined.
  7. Set the Pudding:
    • Pour the warm pudding into individual serving dishes if desired. Place in the refrigerator to set for at least 1 hour.
  8. Serve:
    • Serve the Italian chocolate pudding with whipped cream and fresh fruit for garnish.
