Italian Chocolate Pudding
Ingredients:
- 1 cup heavy whipping cream
- 1 cup whole milk
- 6 egg yolks
- 1/4 cup granulated sugar
- 4 oz semi-sweet chocolate, roughly chopped
- 1 tablespoon butter
- Pinch of salt
- 1 teaspoon vanilla extract
Preparation:
- Heat the Dairy:
- In a medium-sized saucepan, combine the heavy cream and milk. Place over medium heat and bring to a simmer, then remove from heat.
- Prepare the Egg Mixture:
- In a large bowl, beat the egg yolks and sugar together until the mixture is smooth and slightly airy.
- Temper the Eggs:
- Slowly pour a thin stream of the warm cream mixture into the egg mixture, whisking constantly to combine. This step ensures the eggs are tempered and won’t scramble.
- Cook the Pudding:
- Pour the combined mixture back into the saucepan and return to medium heat. Stir constantly for 4-5 minutes until the mixture begins to thicken.
- Melt the Chocolate:
- Place the chopped chocolate in a large bowl. Pour the warm cream mixture over the chocolate and let it sit for 1-2 minutes to allow the chocolate to melt.
- Finish the Pudding:
- Add the butter, salt, and vanilla extract to the chocolate mixture. Whisk until smooth and fully combined.
- Set the Pudding:
- Pour the warm pudding into individual serving dishes if desired. Place in the refrigerator to set for at least 1 hour.
- Serve:
- Serve the Italian chocolate pudding with whipped cream and fresh fruit for garnish.
