Greek Braised Cauliflower
Ingredients:
- 1/2 cup olive oil
- 1 medium cauliflower head, stem removed and cut into medium-sized florets
- 1 small potato, peeled and diced
- 3 allspice berries
- 3 whole cloves
- 1 cinnamon stick
- 2 tablespoons tomato paste
- Kosher salt and freshly cracked black pepper, to taste
Preparation:
- Sauté the Vegetables:
- In a large pot, heat the olive oil over medium heat.
- Add the cauliflower florets, diced potato, allspice berries, cloves, and cinnamon stick.
- Cook for a few minutes until the spices are fragrant and the cauliflower starts to develop some color.
- Add Tomato Paste and Seasonings:
- Stir in the tomato paste, salt, and pepper until everything is well combined.
- Add Water and Simmer:
- Pour in enough water to cover the vegetables halfway. You can add more water later if needed.
- Bring the mixture to a boil, then reduce the heat to a simmer.
- Arrange the cauliflower with the stems facing down and the florets facing up.
- Cook Until Tender:
- Cover the pot with a lid and let it simmer for about 30 to 50 minutes, or until the cauliflower is tender but not falling apart, and the sauce has thickened and reduced.
