Easy Brownie Truffles
Ingredients:
- 1 box (18 oz) brownie mix (plus ingredients listed on the box)
- 8 oz cream cheese, room temperature
- 3 cups chocolate melting wafers
- Sprinkles for decorating
Instructions:
- Bake the Brownies:
- Prepare the brownies in a 9×13-inch pan according to the package directions. Let the brownies cool completely.
- Prepare the Brownie Mixture:
- Scoop the soft, baked brownies into a large bowl, leaving the firmer edges behind.
- Add the cream cheese to the brownie mixture and beat with a hand or stand mixer until fully combined and smooth, with no lumps of cream cheese remaining.
- Form the Truffles:
- Roll the brownie mixture into 1-tablespoon-sized balls and place them on a parchment-lined baking sheet.
- Freeze the truffles for 30 minutes, or until solid.
- Coat the Truffles:
- Once the truffles are frozen, melt the chocolate wafers in a microwave-safe bowl in 20-second increments, stirring until smooth.
- Using a fork, dip each frozen truffle into the melted chocolate, tapping gently to remove any excess. Return the coated truffles to the baking sheet and immediately top with sprinkles.
- Set the Coating:
- Place the truffles in the refrigerator for 15-20 minutes to allow the chocolate coating to set.
