Dr Pepper Texas Sheet Cake
For the Cake:
- 2 cups granulated sugar
- 2 cups all-purpose flour
- 1 cup (2 sticks) unsalted butter
- 1/2 cup unsweetened cocoa powder
- 1 cup Dr Pepper
- 2 large eggs, lightly beaten
- 1/2 cup buttermilk
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/4 teaspoon kosher salt
For the Icing:
- 1/2 cup (1 stick) unsalted butter
- 1/4 cup unsweetened cocoa powder
- 1/4 cup Dr Pepper
- 2 tablespoons whole milk
- 4 cups powdered sugar, sifted
- 2 teaspoons vanilla extract
- 1/4 teaspoon kosher salt
- 1 1/2 cups chopped pecans
Preparation:
- Preheat Oven and Prepare Pan:
- Preheat your oven to 350°F and grease a 9×13-inch baking pan with nonstick spray. Set aside.
- Make the Cake Batter:
- In a medium saucepan over medium-high heat, combine the Dr Pepper, butter, and cocoa powder. Stir frequently and bring the mixture to a boil, then remove from heat.
- In a large bowl, whisk together the flour, sugar, baking soda, cinnamon, and salt. Pour in the Dr Pepper mixture and whisk until well combined.
- Add the beaten eggs, buttermilk, and vanilla extract to the batter, whisking until smooth.
- Pour the batter into the prepared baking pan.
- Bake the Cake:
- Bake the cake for 16-20 minutes, or until a toothpick inserted into the center comes out clean. Remove from the oven and let the cake rest while you prepare the icing.
- Prepare the Icing:
- In a medium saucepan over medium-low heat, melt the butter and cocoa powder together, whisking until smooth.
- Reduce the heat to low and whisk in the Dr Pepper and milk. Gradually add the powdered sugar, whisking constantly until the icing is smooth. Stir in the vanilla extract.
- Ice the Cake:
- Immediately pour the icing over the warm cake, spreading it gently with a rubber spatula to cover the surface.
- Sprinkle the chopped pecans evenly over the top of the icing.
- Cool and Serve:
- Allow the cake to cool completely for about 1 hour before slicing and serving.
