Dill Buttered Carrots
Ingredients:
- 2 tablespoons unsalted butter
- 2 teaspoons granulated sugar
- 1 lb carrots, peeled and sliced on the diagonal into 1/4-inch thick pieces
- 3/4 cup low-sodium chicken stock or water
- 1/2 teaspoon black pepper
- 1/4 teaspoon fine salt
- 2 tablespoons fresh dill, roughly chopped
Preparation:
- Melt Butter and Combine:
- In a medium-sized pan, melt the butter over medium heat. Once melted, stir in the sugar until combined.
- Add Carrots and Seasonings:
- Add the sliced carrots to the pan, tossing to coat them in the butter and sugar mixture.
- Pour in the chicken stock, and season with black pepper and salt. Stir to combine.
- Cook the Carrots:
- Bring the mixture to a boil, then reduce the heat to a simmer.
- Continue cooking until the liquid has mostly evaporated and the carrots are tender, about 15 to 20 minutes.
- Finish with Dill:
- Stir in the chopped dill and cook for an additional 2 to 3 minutes.
- Serve:
