Heaven on Earth Cake

Ingredients:

  • 1 prepared Angel Food Cake
  • 1 package Instant Vanilla pudding mix (3.4 ounces)
  • 1 1/2 cups milk
  • 1 cup sour cream or plain Greek yogurt
  • 1/2 teaspoon almond extract
  • 1 can cherry pie filling (20 ounces)
  • 1 container Cool Whip (8 ounces)
  • 1 tablespoon toasted almond slices (optional)

Instructions:

  1. Prepare the Cake:
    • Cut the angel food cake into cubes and set aside.
  2. Make the Pudding Mixture:
    • In a bowl, whisk together the pudding mix, milk, sour cream, and almond extract until smooth. Set aside.
  3. Assemble the Cake:
    • In a 13×9-inch baking dish, layer half of the cake cubes evenly on the bottom.
    • Spoon 3/4 of the cherry pie filling over the cake cubes.
    • Add the remaining cake cubes on top of the cherry layer.
  4. Add the Pudding Layer:
    • Pour the prepared pudding mixture over the cake layers, spreading it out evenly.
  5. Top with Cool Whip:
    • Spoon the Cool Whip over the pudding layer, spreading it smoothly.
    • Dollop the remaining cherry pie filling on top.
  6. Chill and Serve:
    • Refrigerate the cake for at least 4 hours, or overnight, to allow the flavors to meld.
    • Just before serving, sprinkle toasted almond slices on top, if desired.
