Pizza Grilled Cheese Sandwich

Ingredients:

Garlic Butter:

  • 1/4 cup unsalted butter, softened
  • 4 tablespoons grated parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt

Grilled Cheese:

  • 8 thick slices sturdy bread (such as sourdough or Italian)
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup pizza or marinara sauce
  • 24 thin slices pepperoni

Instructions:

  1. Prepare the Skillet:
    • Warm a large skillet or griddle over medium-low heat.
  2. Make the Garlic Butter:
    • In a small bowl, mix the softened butter with parmesan cheese, Italian seasoning, garlic powder, and salt until well combined.
  3. Prepare the Bread:
    • Spread half of the garlic butter evenly over one side of 4 slices of bread.
    • Place the buttered side down in the preheated skillet.
  4. Assemble the Sandwiches:
    • Spread 1 tablespoon of pizza sauce on the unbuttered side of each slice of bread in the skillet.
    • Top each with about 1/4 cup shredded mozzarella cheese.
    • Layer 6 slices of pepperoni on each, followed by the remaining mozzarella cheese.
    • Spread 1 tablespoon of pizza sauce on one side of the remaining 4 slices of bread.
    • Place these slices sauce side down on top of the cheese and pepperoni layers.
    • Spread the remaining garlic-parmesan butter on the top slices of bread.
  5. Cook the Sandwiches:
    • Cook each sandwich for 3-4 minutes per side, or until the bread is golden brown and the cheese is melted. Keep the heat on medium-low to avoid burning the bread before the cheese melts.
  6. Serve:
    • Remove the sandwiches from the skillet and let cool for 1-2 minutes.
    • Cut in half and serve warm with extra pizza sauce for dipping.
