Pesto Eggs

Ingredients:

  • 2 tablespoons pesto
  • 2 large eggs
  • Salt and pepper, to taste
  • 2 slices of bread, such as sourdough, toasted

Instructions:

  1. Prepare the Pan:
    • Warm a non-stick pan over medium heat.
    • Add the pesto to the pan and spread it into a thin layer.
  2. Cook the Eggs:
    • When the pesto starts to bubble, crack the eggs on top.
    • Season with salt and pepper to taste.
    • Cover with a lid and cook until the egg whites are set and no longer translucent, about 2-4 minutes.
  3. Toast the Bread:
    • While the eggs are cooking, toast the slices of bread.
    • Add any optional toppings to the toast if desired.
  4. Assemble and Serve:
    • Place one egg on each slice of toasted bread.
    • Drizzle any leftover pesto from the pan over the eggs.
    • Serve immediately and enjoy!
