Garlic Parmesan Cornflake Chicken
Ingredients:
- 4 boneless, skinless chicken breasts
- 2 cups cornflakes, crushed
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- 1/2 cup mayonnaise
- Optional seasonings: paprika, basil, garlic powder, garlic salt, black pepper, parsley flakes
Instructions:
- Preheat Oven:
- Preheat your oven to 375°F (190°C).
- Lightly grease a baking sheet with cooking spray or brush with olive oil. Alternatively, line it with parchment paper.
- Prepare Coating:
- In a shallow dish, combine the crushed cornflakes, grated Parmesan cheese, minced garlic, Italian seasoning, salt, and pepper. Mix well to combine.
- Set Up Dredging Station:
- Place mayonnaise in one shallow dish and the cornflake mixture in another.
- Season and Coat Chicken:
- Season the chicken breasts with salt and pepper.
- Dredge each chicken breast in the mayonnaise, coating it well.
- Then, coat the chicken evenly with the cornflake mixture, pressing gently to adhere.
- Bake:
- Place the coated chicken breasts on the prepared baking sheet.
- Bake in the oven for 20-25 minutes, or until the chicken is cooked through and the coating is golden brown and crispy.
- Serve:
- Once cooked, remove the chicken from the oven and allow it to rest for a few minutes before serving.
