Garlic Parmesan Cornflake Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 cups cornflakes, crushed
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 1/2 cup mayonnaise
  • Optional seasonings: paprika, basil, garlic powder, garlic salt, black pepper, parsley flakes

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 375°F (190°C).
    • Lightly grease a baking sheet with cooking spray or brush with olive oil. Alternatively, line it with parchment paper.
  2. Prepare Coating:
    • In a shallow dish, combine the crushed cornflakes, grated Parmesan cheese, minced garlic, Italian seasoning, salt, and pepper. Mix well to combine.
  3. Set Up Dredging Station:
    • Place mayonnaise in one shallow dish and the cornflake mixture in another.
  4. Season and Coat Chicken:
    • Season the chicken breasts with salt and pepper.
    • Dredge each chicken breast in the mayonnaise, coating it well.
    • Then, coat the chicken evenly with the cornflake mixture, pressing gently to adhere.
  5. Bake:
    • Place the coated chicken breasts on the prepared baking sheet.
    • Bake in the oven for 20-25 minutes, or until the chicken is cooked through and the coating is golden brown and crispy.
  6. Serve:
    • Once cooked, remove the chicken from the oven and allow it to rest for a few minutes before serving.
