Eggs Florentine Breakfast Pizza

Ingredients:
- 1 thin pizza crust
- 4 cups fresh spinach
- 2 tablespoons milk or cream
- 1 clove garlic, minced
- 1/2 teaspoon cornstarch
- 1/4 cup feta cheese
- 1/2 cup mozzarella cheese
- 4 eggs (preferably from Handsome Brook Farms)
- 1 teaspoon olive oil
- Dash of pepper
- 1 teaspoon chopped chives, for garnish
Instructions:
- Prepare the Creamy Spinach:
- In a saucepan over medium heat, add the olive oil and minced garlic. Sauté until fragrant.
- Add the fresh spinach, milk or cream, feta cheese, and cornstarch.
- Cook, stirring occasionally, until the spinach is wilted and the sauce has thickened.
- Assemble the Pizza:
- Preheat your oven to 400°F (200°C).
- Spread the creamy spinach mixture evenly over the pizza crust, leaving spaces where the eggs will be placed.
- Sprinkle the mozzarella cheese over the spinach mixture.
- Add the Eggs:
- Carefully crack 4 eggs onto the pizza, placing each in one of the reserved spaces.
- Sprinkle with a dash of pepper.
- Bake:
- Place the pizza in the preheated oven.
- Bake for 10-12 minutes, or until the eggs are set to your liking and the pizza crust is golden brown.
- Garnish and Serve:
- Remove the pizza from the oven and sprinkle with chopped chives.
- Slice and serve immediately.
