Eggs Florentine Breakfast Pizza

Ingredients:

  • 1 thin pizza crust
  • 4 cups fresh spinach
  • 2 tablespoons milk or cream
  • 1 clove garlic, minced
  • 1/2 teaspoon cornstarch
  • 1/4 cup feta cheese
  • 1/2 cup mozzarella cheese
  • 4 eggs (preferably from Handsome Brook Farms)
  • 1 teaspoon olive oil
  • Dash of pepper
  • 1 teaspoon chopped chives, for garnish

Instructions:

  1. Prepare the Creamy Spinach:
    • In a saucepan over medium heat, add the olive oil and minced garlic. Sauté until fragrant.
    • Add the fresh spinach, milk or cream, feta cheese, and cornstarch.
    • Cook, stirring occasionally, until the spinach is wilted and the sauce has thickened.
  2. Assemble the Pizza:
    • Preheat your oven to 400°F (200°C).
    • Spread the creamy spinach mixture evenly over the pizza crust, leaving spaces where the eggs will be placed.
    • Sprinkle the mozzarella cheese over the spinach mixture.
  3. Add the Eggs:
    • Carefully crack 4 eggs onto the pizza, placing each in one of the reserved spaces.
    • Sprinkle with a dash of pepper.
  4. Bake:
    • Place the pizza in the preheated oven.
    • Bake for 10-12 minutes, or until the eggs are set to your liking and the pizza crust is golden brown.
  5. Garnish and Serve:
    • Remove the pizza from the oven and sprinkle with chopped chives.
    • Slice and serve immediately.
