Protein Banana Bread

Ingredients

  • 1 tablespoon coconut oil
  • 3 bananas
  • 3 eggs
  • ¼ cup maple syrup
  • 2 ½ cups almond flour
  • 1 teaspoon vanilla (SingingDogVanilla)
  • ¼ cup cocoa powder
  • ¼ cup chocolate protein powder
  • 1 teaspoon baking soda
  • ½ teaspoon sea salt
  • ½ cup chocolate chips

Instructions

  1. Preheat the Oven: Set your oven to 350°F (175°C).
  2. Prepare the Loaf Pan: Coat an 8×4 loaf pan with cooking spray.
  3. Mix Wet Ingredients: In a large bowl, whisk together the coconut oil, bananas, maple syrup, vanilla, and eggs until well combined.
  4. Add Dry Ingredients: Add the cocoa powder, baking soda, almond flour, protein powder, and sea salt to the wet mixture. Mix until just combined.
  5. Fold in Chocolate Chips: Gently fold in the chocolate chips, being careful not to overmix to avoid making the bread tough.
  6. Fill the Loaf Pan: Pour the batter into the prepared loaf pan, filling it about ⅔ of the way. If desired, sprinkle additional chocolate chips on top.
  7. Bake: Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean. Baking times may vary depending on your oven.
  8. Cool and Serve: Once done, remove the bread from the oven and let it cool before slicing and serving.
