Air Fryer Roasted Potatoes

Ingredients:

  • 1 lb Yukon gold potatoes, cut into bite-sized pieces (about 1/2” – 3/4” thick), skin-on, scrubbed
  • 1 ½ tablespoons extra virgin olive oil
  • ½ teaspoon fine sea salt (or to taste)
  • ½ teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • ¼ teaspoon freshly ground black pepper (or to taste)
  • 1 tablespoon finely chopped parsley (optional, for garnish)

Instructions:

  1. Prepare the Potatoes:
    • Cut the potatoes into bite-sized pieces (about 1/2” to 3/4” thick) and place them in a medium mixing bowl.
    • Drizzle the potatoes with olive oil and sprinkle with sea salt, Italian seasoning, garlic powder, and black pepper.
    • Toss to ensure the potatoes are evenly coated with oil and seasonings.
  2. Air Fry the Potatoes:
    • Place the seasoned potatoes in a single layer in your air fryer basket.
    • Air fry at 400°F for 18-20 minutes, flipping and tossing halfway through cooking.
    • Continue air frying until the potatoes are golden brown and crisp on the outside, and tender when pierced with a fork.
  3. Serve:
    • Garnish with finely chopped parsley if desired.
