Air Fryer Roasted Potatoes

Ingredients:
- 1 lb Yukon gold potatoes, cut into bite-sized pieces (about 1/2” – 3/4” thick), skin-on, scrubbed
- 1 ½ tablespoons extra virgin olive oil
- ½ teaspoon fine sea salt (or to taste)
- ½ teaspoon Italian seasoning
- ½ teaspoon garlic powder
- ¼ teaspoon freshly ground black pepper (or to taste)
- 1 tablespoon finely chopped parsley (optional, for garnish)
Instructions:
- Prepare the Potatoes:
- Cut the potatoes into bite-sized pieces (about 1/2” to 3/4” thick) and place them in a medium mixing bowl.
- Drizzle the potatoes with olive oil and sprinkle with sea salt, Italian seasoning, garlic powder, and black pepper.
- Toss to ensure the potatoes are evenly coated with oil and seasonings.
- Air Fry the Potatoes:
- Place the seasoned potatoes in a single layer in your air fryer basket.
- Air fry at 400°F for 18-20 minutes, flipping and tossing halfway through cooking.
- Continue air frying until the potatoes are golden brown and crisp on the outside, and tender when pierced with a fork.
- Serve:
- Garnish with finely chopped parsley if desired.
