Sweet Corn Chicken Soup

Ingredients

  • 1 tablespoon butter
  • 1 cup diced yellow onions
  • 1 tablespoon minced garlic
  • 1 teaspoon minced ginger
  • 2 cups frozen corn
  • 2 cups shredded chicken
  • 14.75 oz cream-style sweet corn
  • 6 cups chicken broth
  • 1 tablespoon soy sauce
  • 1/2 teaspoon pepper
  • 1/4 cup water
  • 2 tablespoons cornstarch
  • 1 cup chopped green onions

Instructions

  1. Melt the butter in a large pot or Dutch oven over medium heat.
  2. Add the diced onions and cook until translucent, stirring occasionally.
  3. Stir in the minced garlic and ginger, and cook for 2 minutes until fragrant.
  4. Add the frozen corn and cook for a few minutes until thawed, stirring regularly.
  5. Stir in the shredded chicken and cream-style sweet corn.
  6. Pour in the chicken broth, soy sauce, and pepper, stirring to combine. Bring to a boil.
  7. In a small bowl, mix the water and cornstarch until fully dissolved, then pour into the boiling soup while stirring.
  8. Reduce the heat to medium-low and let the soup simmer for 15 minutes.
  9. Remove the pot from heat and stir in the chopped green onions.
