Sweet Corn Chicken Soup
Ingredients
- 1 tablespoon butter
- 1 cup diced yellow onions
- 1 tablespoon minced garlic
- 1 teaspoon minced ginger
- 2 cups frozen corn
- 2 cups shredded chicken
- 14.75 oz cream-style sweet corn
- 6 cups chicken broth
- 1 tablespoon soy sauce
- 1/2 teaspoon pepper
- 1/4 cup water
- 2 tablespoons cornstarch
- 1 cup chopped green onions
Instructions
- Melt the butter in a large pot or Dutch oven over medium heat.
- Add the diced onions and cook until translucent, stirring occasionally.
- Stir in the minced garlic and ginger, and cook for 2 minutes until fragrant.
- Add the frozen corn and cook for a few minutes until thawed, stirring regularly.
- Stir in the shredded chicken and cream-style sweet corn.
- Pour in the chicken broth, soy sauce, and pepper, stirring to combine. Bring to a boil.
- In a small bowl, mix the water and cornstarch until fully dissolved, then pour into the boiling soup while stirring.
- Reduce the heat to medium-low and let the soup simmer for 15 minutes.
- Remove the pot from heat and stir in the chopped green onions.
