Broccoli Cheddar Soup

Ingredients

  • 1/2 cup butter
  • 1 cup diced yellow onions
  • 1/2 cup all-purpose flour
  • 3 cups chicken broth
  • 3 cups milk
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 1 tsp salt
  • 1 tsp pepper
  • 10 oz broccoli florets, chopped
  • 3 cups shredded triple cheddar cheese blend

Instructions

  1. Melt the butter in a large pot over medium heat.
  2. Add the diced onions and cook until they become translucent.
  3. Stir in the flour and cook the mixture for 3 minutes, stirring frequently.
  4. Gradually whisk in the chicken broth until a thick mixture forms.
  5. Add the milk and whisk until smooth.
  6. Stir in the onion powder, garlic powder, salt, and pepper.
  7. Add the chopped broccoli florets and stir to combine.
  8. Let the soup simmer over medium heat for 15 minutes, stirring frequently.
  9. Remove the pot from heat and stir in the shredded cheddar cheese until melted and well combined.
