Broccoli Cheddar Pasta Salad
Ingredients
- 12 oz rotini noodles
- 4 cups broccoli florets
- 1 cup diced red onions
- 1 cup shredded carrots
- 2 cups shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 3/4 cup mayonnaise
- 1/2 cup ranch dressing
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
Instructions
- Cook the rotini noodles according to the package directions.
- Drain the noodles and rinse with cold water to cool them down.
- Once the rotini is cold, transfer it to a large mixing bowl.
- Add the broccoli florets, diced red onions, shredded carrots, shredded cheddar cheese, and grated Parmesan cheese to the bowl. Stir well to combine.
- In a separate bowl, mix the mayonnaise, ranch dressing, onion powder, and garlic powder.
- Pour the dressing mixture over the pasta and vegetables. Stir until everything is well coated.
- Serve the salad immediately or chill it in the refrigerator until ready to serve.
- Top with additional shredded cheddar cheese if desired.
