Mac and Cheese Meatloaf Casserole

Ingredients

  • 1 cup ketchup
  • 1 cup Sweet Baby Ray’s Hickory & Brown Sugar barbecue sauce
  • 2 lbs lean ground beef
  • 30 Ritz Crackers
  • 2 oz Lipton onion soup mix
  • 2 eggs
  • 3 cups macaroni noodles
  • 2 cups milk
  • 10.5 oz condensed cheddar cheese soup
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 4 cups shredded mozzarella and cheddar cheese blend

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium mixing bowl, combine the ketchup and barbecue sauce. Set aside.
  3. In a large mixing bowl, combine the ground beef, crushed Ritz crackers, onion soup mix, eggs, and 1/2 cup of the ketchup and barbecue sauce mixture. Mix thoroughly using your hands until well combined.
  4. Press the meatloaf mixture evenly into a greased 9 x 13 inch baking dish.
  5. Spread the remaining ketchup and barbecue sauce mixture over the top of the meatloaf.
  6. Bake the meatloaf in the preheated oven for 30 minutes.
  7. While the meatloaf is baking, cook the macaroni noodles according to the package instructions. Drain and set aside.
  8. In a large mixing bowl, whisk together the milk and condensed cheddar cheese soup until smooth. Add the salt, pepper, garlic powder, and onion powder, and whisk again.
  9. Stir the cooked macaroni noodles into the milk and cheese mixture until well coated.
  10. Add 2 cups of the shredded cheese to the bowl and stir until combined.
  11. After the meatloaf has baked for 30 minutes, remove it from the oven.
  12. Spread the macaroni mixture evenly over the meatloaf.
  13. Sprinkle the remaining 2 cups of shredded cheese over the top of the casserole.
  14. Return the dish to the oven and bake for an additional 17-20 minutes, until the cheese is melted and just starting to brown.
  15. Remove the casserole from the oven and let it sit for a few minutes before slicing and serving.
