Loaded Potato Meatloaf Casserole

Ingredients

  • 1 1/2 cups water
  • 1/2 cup milk
  • 1 (4 oz) package garlic-flavored instant mashed potatoes
  • 1 lb extra lean ground beef
  • 1/2 cup diced onion
  • 2 tbsp brown sugar
  • 1 tbsp Worcestershire sauce
  • 1 cup seasoned Italian bread crumbs
  • 1 egg
  • 1 1/2 cups shredded cheddar cheese blend
  • 1/4 cup real bacon bits

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a medium saucepan, bring the water and milk to a boil. Remove from heat and stir in the instant mashed potato powder. Set aside.
  3. In a large mixing bowl, combine the ground beef, diced onion, brown sugar, and Worcestershire sauce. Mix thoroughly using your hands.
  4. Add the bread crumbs and egg to the meat mixture and continue mixing until well combined.
  5. Press the meat mixture evenly into an 8-inch square baking dish.
  6. Spread the prepared mashed potatoes over the meat layer using a rubber spatula.
  7. Sprinkle the shredded cheddar cheese blend over the mashed potatoes, followed by the bacon bits.
  8. Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
  9. Remove the foil and continue baking for an additional 10 minutes until the cheese is melted and slightly golden.
  10. Remove the casserole from the oven and let it cool for a few minutes before slicing and serving.
