Ingredients:
- 1 to 2 shallots, thinly sliced
- 2 to 3-pound turkey breast with bone, skin-on
- 1/2 cup salted butter, melted (see note for browning option)
- 1 teaspoon lemon pepper
- 1 teaspoon sea salt
- 1 teaspoon lemon zest
- 1 teaspoon finely chopped fresh rosemary
- 2 to 3 sprigs of thyme, plus more for garnish
Instructions:
- Prepare Slow Cooker:
- Distribute the sliced shallots evenly at the bottom of the slow cooker. Place the turkey breast on top of the shallots, skin side facing up.
- Season Butter:
- Melt the butter, or for an added depth of flavor, consider browning it. Stir in lemon pepper, salt, lemon zest, chopped rosemary, and the leaves from the thyme sprigs until well combined.
- Cook:
- Drizzle the seasoned butter mixture over the turkey breast, trying to keep as much of it on the turkey as possible, though some runoff is expected. Cover the slow cooker with its lid and cook on HIGH for 4-6 hours. Monitor the internal temperature of the turkey breast to prevent overcooking; it should reach 165°F (74°C).
- Brown the Skin:
- Once cooked, carefully transfer the turkey breast to a baking sheet. Broil for 2-3 minutes or until the skin achieves your desired level of browning and crispness.
- Serve:
- Slice the turkey breast and serve it garnished with additional thyme sprigs. Pair with gravy if desired.
