Amaretti Cookies Recipe
Ingredients:
- 2 ¼ cups almond flour
- ⅔ cup granulated sugar
- ¼ teaspoon salt
- 2 large egg whites, at room temperature
- 1 teaspoon lemon zest
- ½ teaspoon almond extract
- ½ cup powdered sugar for coating
Instructions:
- Oven Preparation:
- Begin by preheating your oven to 300°F (150°C). Prepare a large baking sheet by lining it with parchment paper.
- Combine Dry Ingredients:
- In a bowl, combine the almond flour, granulated sugar, lemon zest, and salt. Whisk these ingredients together until well mixed.
- Beat Egg Whites:
- In a separate bowl, use an electric mixer to beat the egg whites until stiff peaks form. This will create the light and airy texture characteristic of amaretti cookies.
- Fold in Egg Whites:
- Carefully fold the beaten egg whites into the dry ingredients. Add the almond extract during this step. Use a spatula to gently combine everything without deflating the egg whites.
- Sugar Coating:
- Spread the powdered sugar on a plate. With a 1 ½ tablespoon scoop or spoon, form the dough into 1-inch balls. Roll each ball in the powdered sugar, ensuring it’s fully coated on all sides.
- Bake the Cookies:
