Peanut Butter Kiss Cookies Recipe
Ingredients:
- 2 1/4 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup vegetable shortening
- 1/2 cup unsalted butter, at room temperature
- 1/2 cup granulated sugar (extra for rolling)
- 1/2 cup light brown sugar, packed
- 1/2 cup peanut butter
- 2 tsp milk
- 1 tbsp vanilla extract
- 1 large egg
- 36 chocolate kisses, unwrapped
Instructions:
- Preparation:
- Preheat your oven to 375°F (190°C) and line two baking sheets with parchment paper. Place some granulated sugar in a small bowl for rolling the cookies. Set both the bowl and baking sheets aside.
- Combine Dry Ingredients:
- In a large mixing bowl, whisk together the flour, baking soda, and salt. Set this mixture aside.
- Creaming the Fats and Sugars:
- In a stand mixer (or using a hand mixer and a large bowl), cream the shortening, butter, granulated sugar, and brown sugar together on medium-high until smooth and well-combined, about 5-7 minutes.
- Incorporate Peanut Butter:
- Stop the mixer and add the peanut butter. Resume mixing on medium-high until the peanut butter is evenly mixed into the batter, about 1-2 minutes.
- Add Wet Ingredients:
- Reduce the mixer speed to low and add in the milk, vanilla extract, and egg, mixing just until incorporated.
- Mix in Dry Ingredients:
- Continuing at low speed, gradually add the dry ingredients, incorporating them about 1/3 to 1/2 cup at a time. Stop mixing as soon as you see no more dry flour.
- Forming Cookies:
- Using a teaspoon-sized cookie scoop, form dough balls and roll them in your hands. Roll each ball in the bowl of granulated sugar until coated and place on the prepared baking sheets.
- Baking:
- Bake in the preheated oven for 10-12 minutes, or until the cookies are just starting to turn golden on the bottom.
- Adding Chocolate Kisses:
- Immediately after removing the cookies from the oven, press a chocolate kiss into the center of each cookie. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
