Peanut Butter Kiss Cookies Recipe

Ingredients:

  • 2 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup vegetable shortening
  • 1/2 cup unsalted butter, at room temperature
  • 1/2 cup granulated sugar (extra for rolling)
  • 1/2 cup light brown sugar, packed
  • 1/2 cup peanut butter
  • 2 tsp milk
  • 1 tbsp vanilla extract
  • 1 large egg
  • 36 chocolate kisses, unwrapped

Instructions:

  1. Preparation:
    • Preheat your oven to 375°F (190°C) and line two baking sheets with parchment paper. Place some granulated sugar in a small bowl for rolling the cookies. Set both the bowl and baking sheets aside.
  2. Combine Dry Ingredients:
    • In a large mixing bowl, whisk together the flour, baking soda, and salt. Set this mixture aside.
  3. Creaming the Fats and Sugars:
    • In a stand mixer (or using a hand mixer and a large bowl), cream the shortening, butter, granulated sugar, and brown sugar together on medium-high until smooth and well-combined, about 5-7 minutes.
  4. Incorporate Peanut Butter:
    • Stop the mixer and add the peanut butter. Resume mixing on medium-high until the peanut butter is evenly mixed into the batter, about 1-2 minutes.
  5. Add Wet Ingredients:
    • Reduce the mixer speed to low and add in the milk, vanilla extract, and egg, mixing just until incorporated.
  6. Mix in Dry Ingredients:
    • Continuing at low speed, gradually add the dry ingredients, incorporating them about 1/3 to 1/2 cup at a time. Stop mixing as soon as you see no more dry flour.
  7. Forming Cookies:
    • Using a teaspoon-sized cookie scoop, form dough balls and roll them in your hands. Roll each ball in the bowl of granulated sugar until coated and place on the prepared baking sheets.
  8. Baking:
    • Bake in the preheated oven for 10-12 minutes, or until the cookies are just starting to turn golden on the bottom.
  9. Adding Chocolate Kisses:
    • Immediately after removing the cookies from the oven, press a chocolate kiss into the center of each cookie. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
