No-Bake Chocolate Cheesecake Recipe

Ingredients:

  • ½ cup butter, melted
  • 300 grams (approx. 25 cookies) Oreo cookies, with filling
  • 200 grams (or approx. 1 ¼ cups) high-quality chocolate or chocolate chips
  • 1 ½ cups heavy whipping cream, cold, divided
  • 750 grams (24 oz or 3 packages) cream cheese, at room temperature
  • 255 grams (2 cups) powdered sugar

Instructions:

  1. Prepare the Crust:
    • Use a food processor to blend the melted butter and Oreo cookies until you achieve fine crumbs and the mixture begins to stick together. If you don’t have a food processor, you can crush the cookies in a bag with a rolling pin and mix with butter in a bowl.
    • Cut a piece of parchment paper to fit between the bottom and the rim of a 9-inch springform pan. This step is optional but helps to remove the cheesecake more easily later.
    • Firmly press the crumb mixture into the bottom and slightly up the sides (about ½ inch) of the pan. Set aside.
  2. Chocolate Mixture:
    • In a medium bowl, combine the chocolate and ½ cup of the heavy whipping cream. Microwave in 20-30 second bursts on high, stirring between each interval, until the chocolate is fully melted and the mixture is smooth. Allow to cool slightly before proceeding.
  3. Cheesecake Filling:
    • In a large bowl, use an electric mixer to beat the cream cheese until smooth. Add the powdered sugar and the slightly cooled melted chocolate, mixing on low speed until everything is well combined.
    • In a separate bowl, whip the remaining 1 cup of heavy cream until it forms stiff peaks. Gently fold this whipped cream into the chocolate cream cheese mixture using a spatula or mix on low speed until just combined, being careful not to deflate the whipped cream.
  4. Assemble and Chill:
    • Pour the filling over the crust in the springform pan, smoothing the top with a spatula.
    • Cover the cheesecake and refrigerate for at least 6 hours, or overnight, until firm.
  5. Serving:
    • Once set, release the cheesecake from the springform pan, slice, and serve. If desired, garnish with additional whipped cream or chocolate shavings.
