Ingredients:

  • 16 Oreo cookies (have a few extras on hand in case of breakages)
  • 1 pint of your favorite premium ice cream, directly from the freezer

Instructions:

  1. Prepare the Ice Cream:
    • Place a sheet of parchment paper, about 18 inches long, on a flat surface. Use a dull knife to loosen the ice cream from its container, then gently slide it out onto the parchment. Cut the ice cream cylinder in half lengthwise and position the halves side by side on the parchment. Wrap the parchment around the ice cream, shaping it into a log approximately the diameter of an Oreo. Wrap tightly and freeze until solid, at least 1 hour.
  2. Prepare the Oreos:
    • On a baking sheet that fits in your freezer, twist each Oreo open and scrape off the cream with a dull knife. You can discard the filling or give it to someone looking for a sweet treat. Arrange 16 cookie halves, cream side up, on the baking sheet.
  3. Slice the Ice Cream:
    • Once the ice cream log is fully frozen, use a sharp, thin knife to slice it into 16 roughly 1/2-inch thick discs.
  4. Assemble the Sandwiches:
    • Quickly place an ice cream slice on each of the cookie halves on the baking sheet, then cap them with the cookies’ other halves to form sandwiches. Return the baking sheet to the freezer to firm up the ice cream sandwiches before transferring them to an airtight container for storage.
  5. Serving:
    • For a slightly crunchy cookie, enjoy the ice cream sandwiches about 12 hours after assembling. For a softer, wafer-like texture similar to store-bought ice cream sandwiches, wait at least 24 hours. These treats are best enjoyed within a week.
