Buckeye Fudge Recipe

Ingredients:

For the Peanut Butter Layer:

  • 1 cup butter
  • 1 cup creamy peanut butter
  • 1 tsp vanilla extract
  • 3½ cups powdered sugar

For the Chocolate Layer:

  • 7 oz sweetened condensed milk (half of a 14-ounce can)
  • 1½ cups dark or semi-sweet chocolate chips
  • 2 tbsp butter

Microwave Method:

Peanut Butter Layer:

  1. In a glass mixing bowl, combine butter, peanut butter, and vanilla. Microwave on high for 90 seconds. Stir until the mixture is smooth and creamy.
  2. Gradually mix in powdered sugar, about a cup at a time, until fully incorporated.
  3. Grease an 8 or 9-inch square pan, or line it with parchment paper. Press the peanut butter mixture evenly into the bottom of the pan.

Chocolate Layer:

  1. In a medium-sized glass bowl, mix together sweetened condensed milk, chocolate chips, and butter. Microwave for 90 seconds, then stir. If needed, heat for an additional 15 seconds until smooth.
  2. Pour the melted chocolate over the peanut butter layer, spreading evenly.
  3. Allow the fudge to cool at room temperature for at least 4 hours before cutting, or refrigerate to set. Cut into bite-sized pieces. Store in an airtight container in the refrigerator for up to a week.

  2. Pour over the peanut butter layer, spreading to cover.
  3. Let the fudge cool at room temperature for at least 4 hours or chill in the refrigerator before slicing into pieces. Store in an airtight container in the fridge for up to a week.
