Cod with Tomato Lemon Butter Sauce
Ingredients:
- 1 tbsp olive oil
- 3 tbsp butter, divided
- 1 lb cod fillets
- Salt and freshly ground black pepper, to taste
- 1 lb cherry tomatoes, halved
- 3 garlic cloves, minced
- A pinch of red pepper flakes
- 3 green onions, sliced, whites and greens separated
- 1/2 cup chicken broth, white wine, or dashi
- 2 tbsp fresh lemon juice
- 1 tbsp fresh parsley, finely chopped
- 1 tbsp fresh basil, finely chopped
Instructions:
- Begin by heating olive oil and 2 tablespoons of butter in a large skillet over medium-high heat. Season the cod fillets with salt and pepper, then place them in the skillet. Cook each side for about 2-3 minutes until they turn golden brown and are fully cooked. Once done, transfer the cod to a plate and set it aside.
- In the same skillet, add the halved cherry tomatoes. Cook for 3-5 minutes, or until the tomatoes start to blister. Stir occasionally.
- Lower the heat to medium. Add the minced garlic, the white parts of the green onions, and the red pepper flakes to the skillet. Cook for about 1 minute until the mixture emits a fragrant aroma.
- Pour in the chicken broth (or your choice of white wine or dashi). Allow it to come to a simmer and let it cook for 3 minutes.
- Stir in the lemon juice and the remaining tablespoon of butter. Season with salt and pepper according to your taste preferences.
- Return the cod to the skillet, along with the green onion tops, chopped parsley, and basil. Gently mix to combine and warm the cod through.
