Parmesan Mayo Chicken
Ingredients:
- 4 thin boneless skinless chicken breasts (about 1 ½ pounds)
- Salt and pepper, for seasoning
- 1/2 cup mayonnaise (115 grams)
- 1 cup grated Parmesan cheese, divided (3 ounces)
- 2 teaspoons minced garlic (16 grams)
- ½ teaspoon ground mustard
- 1/2 teaspoon salt
- ¼ teaspoon paprika
- ¼ teaspoon black pepper
Instructions:
- Prepare Oven and Pan: Preheat your oven to 400°F. Lightly grease a 9×13-inch baking dish with cooking spray.
- Prepare Chicken: If the chicken breasts are large, slice them horizontally to create thinner pieces for even cooking. Place them in the prepared baking dish and season both sides with salt and pepper.
- Create Mayo Mixture: In a medium bowl, combine the mayonnaise with ¾ cup of Parmesan cheese. Stir in the minced garlic, ground mustard, salt, paprika, and black pepper until the mixture is well blended.
- Apply Mayo Mixture: Evenly distribute the mayo mixture over the chicken breasts in the dish. Then, sprinkle the remaining Parmesan cheese on top.
- Bake: Bake the chicken in the preheated oven for 20 minutes, or until it reaches an internal temperature of 165°F, indicating it’s fully cooked.
- Broil for Crispiness: For a slightly browned and crispy top, turn the broiler on low and broil for about 2 minutes, keeping a close eye to prevent burning.
- Serve and Store: Serve the chicken hot from the oven. Leftovers can be stored in an airtight container in the refrigerator for up to 4 days.
