Cinnamon Chip Snickerdoodle Bread
Ingredients:
- 3 cups all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- 2 teaspoons cinnamon
- 1 cup softened butter
- 2 cups sugar
- 4 eggs
- 2 teaspoons vanilla extract
- 1 cup sour cream
- 1 ½ cups (1 package) Hershey’s cinnamon chips

Instructions:
- Preheat the Oven: Set your oven to 350°F (175°C). Lightly spray the bottoms of five mini loaf pans (5 ¾ x 3 ¼ x 2 ¼ inches) with a cooking spray that contains flour.
- Combine Dry Ingredients: In a medium-sized bowl, whisk together 3 cups flour, baking powder, salt, and 2 teaspoons cinnamon. Set this mixture aside.
- Cream Butter and Sugar: In a large mixing bowl, use an electric mixer to cream the butter and 2 cups sugar until the mixture is light and fluffy, about two minutes.
- Add Eggs and Vanilla: Beat in the eggs one at a time, ensuring each is well incorporated before adding the next. Mix in the vanilla extract and sour cream.
- Incorporate Dry Ingredients: Slowly add the dry ingredients to the wet, mixing just until combined to avoid overmixing.
- Prepare Cinnamon Chips: Toss the cinnamon chips with 2 tablespoons of flour to coat them evenly. This helps prevent the chips from sinking to the bottom of the batter. Gently fold the coated chips into the batter.
- Fill Pans and Top: Spoon the batter into the prepared mini loaf pans, filling each no more than two-thirds full to allow room for rising. Mix together the 2 tablespoons of sugar and 2 teaspoons of cinnamon and sprinkle this mixture over the top of each loaf.
