No Bake Cherry Cheesecake Parfaits
Ingredients:
- 6 graham crackers (1 small pack)
- 8 oz. (227 g) cream cheese, softened
- ¼ cup (56 g) organic sugar
- 2 cups (473 ml) 40% heavy whipping cream
- 1 can (21 oz./595 g) cherry pie filling
- Canned cherries with stems for garnish
- 24 parfait cups
- 16-inch pastry bag
Instructions:
Prepare the Base:
- Crush the graham crackers finely using a food processor. Set aside until needed.
Make the Cheesecake Mixture:
- In a mixing bowl, beat the softened cream cheese and sugar on high speed until you achieve a creamy consistency and the sugar has completely dissolved. Use a silicone spatula to scrape down the sides of the bowl occasionally, ensuring everything is well combined.
- Add the heavy whipping cream to the bowl. Begin beating on low speed, gradually increasing to high. Continue mixing until the mixture thickens and becomes smooth, about a minute. You might need to scrape down the bowl once more to incorporate any leftover crumbs fully.
Assemble the Parfaits:
- Place 2 tablespoons of crushed graham cracker crumbs at the bottom of each parfait cup.
- Fill a 16-inch pastry bag with the cream cheese mixture and pipe it into each cup until ¾ full.
- Top each parfait with cherry pie filling, filling it to the top of the cup. Garnish each with a canned cherry with a stem.
- Refrigerate the parfaits for at least an hour before serving. These can be made a day ahead, perfect for preparing in advance for any occasion.
