No Bake Cherry Cheesecake Parfaits

Ingredients:

  • 6 graham crackers (1 small pack)
  • 8 oz. (227 g) cream cheese, softened
  • ¼ cup (56 g) organic sugar
  • 2 cups (473 ml) 40% heavy whipping cream
  • 1 can (21 oz./595 g) cherry pie filling
  • Canned cherries with stems for garnish
  • 24 parfait cups
  • 16-inch pastry bag

Instructions:

Prepare the Base:

  1. Crush the graham crackers finely using a food processor. Set aside until needed.

Make the Cheesecake Mixture:

  1. In a mixing bowl, beat the softened cream cheese and sugar on high speed until you achieve a creamy consistency and the sugar has completely dissolved. Use a silicone spatula to scrape down the sides of the bowl occasionally, ensuring everything is well combined.
  2. Add the heavy whipping cream to the bowl. Begin beating on low speed, gradually increasing to high. Continue mixing until the mixture thickens and becomes smooth, about a minute. You might need to scrape down the bowl once more to incorporate any leftover crumbs fully.

Assemble the Parfaits:

  1. Place 2 tablespoons of crushed graham cracker crumbs at the bottom of each parfait cup.
  2. Fill a 16-inch pastry bag with the cream cheese mixture and pipe it into each cup until ¾ full.
  3. Top each parfait with cherry pie filling, filling it to the top of the cup. Garnish each with a canned cherry with a stem.
  4. Refrigerate the parfaits for at least an hour before serving. These can be made a day ahead, perfect for preparing in advance for any occasion.
