NYC-Style Chocolate Chip Cookies Recipe

Ingredients:

  • 125g unsalted butter
  • 100g light brown sugar
  • 75g white granulated sugar
  • 1 medium egg
  • 1 tsp vanilla extract (optional)
  • 300g plain flour
  • 1 and 1/2 tsp baking powder
  • 1/2 tsp bicarbonate of soda
  • 1/2 tsp sea salt
  • 300g chocolate chips (split between 150g dark and 150g milk chocolate)

Instructions:

  1. In a mixing bowl, cream together the butter, brown sugar, and white sugar until smooth. A stand mixer with the paddle attachment works great for this.
  2. Beat in the egg until well incorporated. If you’re adding vanilla extract, mix it in now.
  3. Gradually add the plain flour, baking powder, bicarbonate of soda, and sea salt to the bowl. Mix until a cookie dough forms.
  4. Stir in the chocolate chips until evenly distributed throughout the dough.
  5. Divide the dough into eight balls, each weighing about 120g.
  6. Place the dough balls onto a tray and freeze for at least 30 minutes, or refrigerate for about an hour, to firm up.
  7. Preheat your oven to 180°C (fan) or 200°C (conventional). Adjust to 160°C-170°C if your oven tends to run hot.
  8. Place the chilled dough balls onto a baking tray lined with parchment paper, spacing them out with four per tray.
  9. Bake in the preheated oven for 12-14 minutes. The cookies should spread out naturally, but if you prefer flatter cookies, press them down slightly before baking.
  10. Allow the cookies to cool on the tray for at least 30 minutes after baking. They will continue to set as they cool.
