NYC-Style Chocolate Chip Cookies Recipe
Ingredients:
- 125g unsalted butter
- 100g light brown sugar
- 75g white granulated sugar
- 1 medium egg
- 1 tsp vanilla extract (optional)
- 300g plain flour
- 1 and 1/2 tsp baking powder
- 1/2 tsp bicarbonate of soda
- 1/2 tsp sea salt
- 300g chocolate chips (split between 150g dark and 150g milk chocolate)
Instructions:
- In a mixing bowl, cream together the butter, brown sugar, and white sugar until smooth. A stand mixer with the paddle attachment works great for this.
- Beat in the egg until well incorporated. If you’re adding vanilla extract, mix it in now.
- Gradually add the plain flour, baking powder, bicarbonate of soda, and sea salt to the bowl. Mix until a cookie dough forms.
- Stir in the chocolate chips until evenly distributed throughout the dough.
- Divide the dough into eight balls, each weighing about 120g.
- Place the dough balls onto a tray and freeze for at least 30 minutes, or refrigerate for about an hour, to firm up.
- Preheat your oven to 180°C (fan) or 200°C (conventional). Adjust to 160°C-170°C if your oven tends to run hot.
- Place the chilled dough balls onto a baking tray lined with parchment paper, spacing them out with four per tray.
- Bake in the preheated oven for 12-14 minutes. The cookies should spread out naturally, but if you prefer flatter cookies, press them down slightly before baking.
- Allow the cookies to cool on the tray for at least 30 minutes after baking. They will continue to set as they cool.
