Lemon Loaf with Glaze Recipe

Ingredients:

For the Lemon Loaf:

  • 1 and 1/2 cups all-purpose flour (187g)
  • 2 tsp lemon zest (8g)
  • 1 cup sugar (200g)
  • 2 large eggs, room temperature
  • 1/2 cup butter, softened (110g)
  • 2 tbsp vegetable oil
  • 2 tbsp lemon juice (30ml)
  • 1/2 cup milk (120ml)
  • 1 tsp baking powder (5g)
  • 1/2 tsp salt (3g)

For the Lemon Glaze:

  • 2 tbsp lemon juice (30ml)
  • 1/3 cup icing sugar (50g)

Instructions:

  1. Begin by preheating your oven to 320°F (160°C) and prepare a loaf pan with parchment paper.
  2. In a large mixing bowl, combine 1 cup of sugar with 2 teaspoons of lemon zest. Stir until the zest is thoroughly mixed and has begun to infuse the sugar with its oils.
  3. Add 1/2 cup of softened butter to the sugar mixture. Ensure the butter is soft but not melted, and mix until well incorporated.
  4. Stir in 2 tablespoons of vegetable oil until the mixture is homogeneous. Switch to a whisk and continue to mix until the texture is pale and fluffy.
  5. Incorporate the eggs one at a time, mixing thoroughly after each addition. Then, mix in 2 tablespoons of lemon juice, ensuring to scrape the sides and bottom of the bowl for an even mix.
  6. Sift together the dry ingredients (flour, baking powder, salt) before adding them to the wet mix for a smoother batter.
  7. Gently fold in 1/2 cup of milk, mixing with your whisk to combine everything into a creamy batter.
  8. Pour the batter into the prepared loaf pan and bake for 40-50 minutes, or until a tester comes out clean.
  9. Let the loaf cool before removing it from the pan and peeling off the parchment paper.
  10. For the glaze, whisk together 2 tablespoons of lemon juice with 1/3 cup of icing sugar until smooth. Drizzle this over the cooled loaf and garnish with additional lemon zest for a burst of flavor.
