Lemon Loaf with Glaze Recipe
Ingredients:
For the Lemon Loaf:
- 1 and 1/2 cups all-purpose flour (187g)
- 2 tsp lemon zest (8g)
- 1 cup sugar (200g)
- 2 large eggs, room temperature
- 1/2 cup butter, softened (110g)
- 2 tbsp vegetable oil
- 2 tbsp lemon juice (30ml)
- 1/2 cup milk (120ml)
- 1 tsp baking powder (5g)
- 1/2 tsp salt (3g)
For the Lemon Glaze:
- 2 tbsp lemon juice (30ml)
- 1/3 cup icing sugar (50g)
Instructions:
- Begin by preheating your oven to 320°F (160°C) and prepare a loaf pan with parchment paper.
- In a large mixing bowl, combine 1 cup of sugar with 2 teaspoons of lemon zest. Stir until the zest is thoroughly mixed and has begun to infuse the sugar with its oils.
- Add 1/2 cup of softened butter to the sugar mixture. Ensure the butter is soft but not melted, and mix until well incorporated.
- Stir in 2 tablespoons of vegetable oil until the mixture is homogeneous. Switch to a whisk and continue to mix until the texture is pale and fluffy.
- Incorporate the eggs one at a time, mixing thoroughly after each addition. Then, mix in 2 tablespoons of lemon juice, ensuring to scrape the sides and bottom of the bowl for an even mix.
- Sift together the dry ingredients (flour, baking powder, salt) before adding them to the wet mix for a smoother batter.
- Gently fold in 1/2 cup of milk, mixing with your whisk to combine everything into a creamy batter.
- Pour the batter into the prepared loaf pan and bake for 40-50 minutes, or until a tester comes out clean.
- Let the loaf cool before removing it from the pan and peeling off the parchment paper.
- For the glaze, whisk together 2 tablespoons of lemon juice with 1/3 cup of icing sugar until smooth. Drizzle this over the cooled loaf and garnish with additional lemon zest for a burst of flavor.
