Ultimate Peanut Brittle
Ingredients:
- Nonstick cooking spray
- 2 cups sugar
- 1/2 cup light corn syrup
- 6 tablespoons unsalted butter, cut into cubes
- 1/2 teaspoon baking soda
- 1 1/2 cups roasted salted peanuts
Instructions:
- Prepare a rimmed baking sheet by lining it with foil. Lightly coat the foil with nonstick cooking spray.
- In a medium saucepan, combine the sugar, corn syrup, and 1/2 cup water. Attach a candy or deep-fry thermometer to the side of the saucepan.
- Heat the mixture over medium flame, bringing it to a boil. Allow it to boil undisturbed until the mixture turns a golden brown color and the thermometer reads 340°F (about 15 minutes).
- Once the correct temperature is reached, quickly take the saucepan off the heat. Stir in the butter and baking soda promptly. The mixture will foam and expand, so stir until it’s smooth and well combined.
- Add the roasted salted peanuts, stirring quickly to ensure they are evenly coated and distributed throughout the mixture.
- Immediately pour the brittle mixture onto the prepared baking sheet. Using a rubber spatula, spread the mixture into a thin, even layer.
- Allow the peanut brittle to cool and harden at room temperature, uncovered. Once completely cooled, break the brittle into pieces.
- Store your peanut brittle in an airtight container to keep it crisp and delicious.
