Broccoli with Quick Cheese Sauce
Ingredients:
- 4 cups broccoli
- 1 cup water
For the Cheese Sauce:
- 1 cup milk
- 1 tablespoon cornstarch
- 1 cup cheddar cheese, shredded
- 1 tablespoon parmesan cheese, grated
- Salt and pepper, to taste
Instructions:
- Rinse the broccoli and transfer it to a non-stick skillet. Pour in 1 cup of water and set the skillet over medium heat. Bring the water to a simmer.
- Cover the skillet and let the broccoli steam for about 3-5 minutes, until tender but still crisp. Then, remove the broccoli from the skillet, transfer it to a bowl, and cover it to keep it warm.
- In a mixing bowl, whisk together the milk and cornstarch until smooth. Pour this mixture into the same skillet used for the broccoli, and place it back over medium heat. Continuously whisk until the sauce begins to thicken.
- Reduce the heat to low. Add both the cheddar and parmesan cheeses to the skillet, whisking until the cheeses have melted and the sauce is smooth.
- Season the cheese sauce with salt and pepper according to your taste preferences.
- Pour the warm cheese sauce over the steamed broccoli before serving.
