Creamy Garlic Chicken Recipe

Ingredients:

  • 2 chicken breasts
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons all-purpose flour
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter, divided
  • ½ medium yellow onion, finely chopped
  • 6 to 7 garlic cloves (mince 4, keep 3 whole)
  • ½ teaspoon Italian seasoning
  • ¼ teaspoon dried oregano
  • ¼ cup chicken stock
  • ¾ cup whole milk
  • ¾ cup heavy cream
  • 2 teaspoons cornstarch
  • ½ cup grated Parmesan cheese
  • Spinach (optional)

Instructions:

  1. Prepare the onion and garlic: finely chop the onion and mince 4 of the garlic cloves; leave the remaining 3 cloves whole. Set aside.
  2. Prepare the chicken: Slice each breast lengthwise into thin cutlets. Pat dry with paper towels.
  3. Season the chicken: Sprinkle both sides of each cutlet with salt and pepper.
  4. Dredge the chicken: Place flour in a shallow dish. Coat each chicken piece lightly with flour on both sides, shaking off the excess.
  5. Cook the chicken: Heat 1 tablespoon each of butter and oil in a skillet over medium heat until the butter melts. Brown the chicken on all sides until golden, working in batches to avoid crowding. Remove chicken and set aside.
  6. Sauté the onion: Add the remaining oil to the skillet and sauté the chopped onion for 2 to 3 minutes, stirring frequently.
  7. Add garlic and herbs: Add the minced garlic to the skillet. Sauté until golden and fragrant. Stir in the Italian seasoning and oregano, sautéing for another 1 to 2 minutes to activate the herbs.
  8. Deglaze the pan: Pour in the chicken stock, scraping up the browned bits from the bottom of the skillet.
  9. Create the sauce: In a small bowl, whisk together the milk and cornstarch. Add this mixture to the pan along with the heavy cream. Stir and simmer until the sauce thickens. Optionally, add spinach at this point to wilt into the sauce.
  10. Finish the sauce: Stir in the Parmesan cheese and the remaining tablespoon of butter until melted and incorporated.
  11. Combine chicken and sauce: Return the chicken to the skillet, immersing it in the sauce. Simmer until the chicken is heated through.

Serve the creamy garlic chicken hot, garnished with your choice of chopped parsley, dill, or thyme.
