Simple Strawberry Pie

Ingredients:

  • 2 cups fresh strawberries
  • Boiling water
  • 1 package Strawberry Flavor Gelatin (Jell-O® or similar)
  • Ice cubes
  • 1/2 cup cold water
  • 1 tub Lite Whipped Topping (Cool Whip® or similar)
  • 1 reduced-fat graham cracker crumb crust (ready-to-use)

Directions:

Step 1: Prepare the Strawberries

  • Slice 1 cup of the strawberries and refrigerate them for later use. Chop the remaining strawberries and set them aside.

Step 2: Gelatin Mixture

  • Add boiling water to the gelatin mix in a bowl. Stir for 2 minutes until the gelatin is completely dissolved. To quickly cool the mixture, add ice to 1/2 cup of cold water to make 1 cup and then add this to the gelatin. Stir until the gelatin thickens slightly, removing any remaining ice pieces.

Step 3: Filling

  • Whisk the Lite Whipped Topping into the gelatin mixture until well combined. Stir in the chopped strawberries. Refrigerate this mixture for 20 to 30 minutes, or until it thickens significantly and can mound.

Step 4: Assemble the Pie

  • Spoon the thickened filling into the graham cracker crust. Refrigerate the pie for 6 hours, or until it sets and becomes firm.

Step 5: Serve

  • Just before serving, top the pie with the sliced strawberries that were set aside.

Variation:

  • For an even lighter version, use Fat-Free Whipped Topping in place of the Lite.
