Mini Blueberry Cheesecakes

Ingredients:

For the Crust:

  • 4 full sheets of graham crackers
  • 1 tablespoon white granulated sugar
  • 2 tablespoons unsalted butter, melted

For the Cheesecake Filling:

  • 1 package (8 ounces) cream cheese, softened
  • 1/2 cup white granulated sugar
  • 1/2 tablespoon all-purpose flour
  • 1/2 teaspoon vanilla extract
  • 1 large egg
  • 1 large lemon (for 1/2 tablespoon zest and 2 tablespoons juice)

For the Topping:

  • 6 tablespoons blueberry jam, divided
  • Fresh blueberries for garnish
  • Powdered sugar (optional)

Instructions:

Preparing the Crust:

  1. Heat your oven to 350°F (175°C). Line a regular-sized muffin pan with 9 cupcake liners. Fill the empty spaces halfway with water to promote even baking.
  2. Crush the graham crackers into fine crumbs using a food processor, ensuring no large chunks remain. Mix in 1 tablespoon sugar and 2 tablespoons melted butter until well combined.
  3. Distribute the graham cracker mixture evenly among the liners, pressing down firmly with a milk cap or the back of a tablespoon to form the crust. Set aside.

Making the Filling:

  1. In a medium bowl, blend the softened cream cheese with 1/2 cup sugar until smooth. Incorporate 1/2 tablespoon flour, 1/2 teaspoon vanilla extract, the egg, lemon juice, and lemon zest, mixing until smooth and well-combined.
  2. Evenly spoon the filling over the crusts in the muffin pan. Bake for 23-27 minutes, until the edges are set but the centers slightly jiggle.
  3. Cool at room temperature for 30 minutes, then chill in the refrigerator for at least 2 hours, allowing the centers to sink slightly for the jam.

Adding the Topping:

  1. Warm 4 and ½ tablespoons of blueberry jam in the microwave for 10-15 seconds, then spoon ½ tablespoon onto each cheesecake, spreading to cover.
  2. Decorate each cheesecake with fresh blueberries (about 4-6, depending on size).
  3. Warm the remaining 1 and ½ tablespoons of jam and brush it over the blueberries for a glossy finish. If desired, dust with powdered sugar.
