Crock-Pot Fully-Loaded Potatoes

Ingredients:

  • 4 small baking potatoes (about 1-1/4 lbs. total)
  • 1 teaspoon of oil
  • 1/4 cup of light ranch dressing
  • 2 tablespoons of real bacon bits
  • 1/4 cup of shredded Triple Cheddar cheese blend
  • 2 teaspoons of freshly chopped chives

Directions:

  1. Start by gently pricking the potatoes with a fork, then lightly brush each one with oil. Wrap each potato individually in aluminum foil, making sure the seam is facing upwards.
  2. Arrange the wrapped potatoes in your slow cooker, spacing them out evenly. Secure the lid on top.
  3. Set your slow cooker to cook on LOW for 6 to 7 hours, or if you’re short on time, on HIGH for 4 to 4-1/2 hours, until the potatoes are tender and cooked through.
  4. Once cooked, carefully unwrap the potatoes. Split them open and fluff the insides with a fork. Drizzle each potato with the light ranch dressing, sprinkle with bacon bits, and top with shredded Triple Cheddar cheese.
  5. Finish by garnishing the loaded potatoes with chopped fresh chives. Serve hot and enjoy the creamy, cheesy, and savory flavors of these slow-cooked delights!
