Spinach Parmesan Chicken in Creamy Sauce
Ingredients:
- 2 chicken breasts
- 3 tbsp butter, divided
- 1/2 tsp each salt and pepper, or to taste
- 1 tsp oregano, divided
- 1 medium onion, finely chopped
- 4 cloves garlic, minced
- 1 small jar sun-dried tomatoes, oil drained and chopped
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1/3 cup grated Parmesan cheese
- 1 cup fresh spinach leaves
Instructions:
- Season the Chicken: Begin by seasoning both sides of the chicken breasts with salt, pepper, and half of the oregano.
- Brown the Chicken: In a large skillet over medium-high heat, melt 2 tablespoons of butter along with a bit of the oil from the sun-dried tomatoes jar. Add the chicken breasts and cook for about 4 minutes on each side until they are nicely browned and fully cooked through. Remove the chicken from the skillet and set aside on a plate.
- Prepare the Sauce: Using the same skillet, reduce the heat to medium and melt the remaining tablespoon of butter. Sauté the onion, garlic, the rest of the oregano, and sun-dried tomatoes until the onions are soft and translucent. Gradually pour in the chicken broth and heavy cream, then sprinkle in the Parmesan cheese. Stir continuously over a simmer for 2-3 minutes until the sauce thickens slightly. Taste and adjust the seasoning with additional salt and pepper as needed.
- Finish with Spinach: Stir in the spinach leaves, cooking just until they begin to wilt. Return the chicken breasts to the skillet, spooning the sauce and spinach over them. Allow the chicken to reheat in the sauce for 2-3 minutes.
- Serve: Plate the chicken breasts topped with the creamy spinach and Parmesan sauce. Optionally, garnish with freshly chopped parsley for an added touch of freshness.
